Bruschetta Chicken Dinner


1 tbsp extra virgin oil
1 tbsp balsamic vinegar
kosher salt and fresh cracked pepper to taste
3  ripe tomatoes - Chopped
2 small cloves garlic - Minced
1/4 c red onion - Chopped
2 tbsp fresh basil leaves - Chopped
3 oz part skim mozzarella - diced
1.25 lbs (8 thin sliced) chicken cutlets

Combine onion, oil, balsamic, salt, and pepper. Set aside. In another bowl, combine tomatoes, garlic, basil, and balsamic-oil mixture. Let is sit at least 10 minutes (even over-night). Add the cheese right before serving.

Season chicken with salt and pepper, and grill up. Top with bruschetta and enjoy! :)
